team di ricerca del<strong> Dipartimento di Scienze Agrarie, Alimentari e agro-ambientali dell\u2019Universit\u00e0 di Pisa<\/strong>, coordinato dal prof. Fabio Mencarelli, <strong>annunciano <\/strong>la finalizzazione del<strong> nuova sistema<\/strong> di microsensoristica <strong>per misurare e garantire la qualit\u00e0 dei nostri vini e olii.<\/strong><\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"is-style-font-inter-md-28\">Il progetto di ricerca VIOLoC, dal titolo \u201cAnalisi di VIno e OLio mediante un Laboratorio on-Chip (LoC) a connettivit\u00e0 remota (clouding)&#8221;, che vede coinvolti come partner l&#8217;<a href=\"https:\/\/www.unitus.it\/\" target=\"_blank\" rel=\"noreferrer noopener\">Universit\u00e0 della Tuscia<\/a> e <a href=\"https:\/\/www.nano.cnr.it\/\" target=\"_blank\" rel=\"noreferrer noopener\">CNR-Nano Pisa<\/a>, si poneva infatti lo scopo di realizzare un LoC (Lab on Chip) a base microfluidimetrica per l&#8217;analisi dei polifenoli non solo del vino, ma anche dell&#8217;olio.<\/p>\n\n\n\n<div style=\"height:78px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"qzr-add-controls-is-panel-title wp-block-heading\">Lo studio<\/h2>\n\n\n\n<div style=\"height:31px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"is-style-font-inter-md-28\">Poich\u00e9 la concentrazione polifenolica rappresenta un indice di valutazione della maturazione dell&#8217;uva o del succo d\u2019oliva, lo sviluppo di un sistema in grado di monitorare costantemente il contenuto di polifenoli \u00e8 una parte essenziale dell\u2019enologia e elaiotecnica di precisione basato su microbilancia a cristalli di quarzo con monitoraggio della dissipazione (QCM). <\/p>\n\n\n\n<p class=\"is-style-font-inter-md-28\">Grazie a questo sistema di precisione integrato, aziende come Sensi (noti produttori vitivinicoli toscani, che hanno preso parte attiva al progetto e da cui sono stati acquisiti molti dei campioni studiati) potranno <strong>alleggerire i costi di laboratorio, garantendo attraverso un\u2019analitica fine e numericamente consistente, la qualit\u00e0 dei loro vini immessi sul mercato<\/strong>.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"is-style-font-inter-md-28\">Per la realizzazione di questo sistema \u00e8 stato condotto uno studio che dalla calibrazione dei sensori, alla verifica su campioni naturali e adulterati, ha consentito di strutturare un metodo per la misurazione dei polifenoli totali in mosto d&#8217;uva e in vino, per il controllo in tempo reale della maturazione degli acini, della macerazione\/fermentazione e dell&#8217;evoluzione del vino. Questa stessa tecnica, applicata nel campo dell\u2019oleificazione si \u00e8 dimostrata utile per il controllo della maturazione del succo di oliva oltre che dell&#8217;olio durante il processo di estrazione.&nbsp;<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"is-style-font-inter-md-28\">Il biosensore QCM (Quartz Crystal Microbalance) \u00e8 innovativo rispetto al prototipo oggetto del <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0026265X23004290?dgcid=coauthor\" target=\"_blank\" rel=\"noreferrer noopener\">precedente studio <\/a>(di cui Kode era gi\u00e0 parte), pubblicato nell\u2019agosto 2023. Il nuovo sensore, \u00e8 basato su una inedita tecnologia che permette di monitorare l&#8217;adesione molecolare in tempo reale in ambiente liquido. Le sue caratteristiche lo hanno reso preferibile al precedente: di semplice utilizzo, compatto e portatile, \u00e8 non solo utilizzabile in modalit\u00e0 standalone, ma anche integrabile in apparecchiature per la vinificazione o per la molitura.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-column style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"is-style-font-inter-md-28\">Oltre alla realizzazione del dispositivo, per velocizzare il sistema e abbassare i costi analitici aziendali, una parte importante del progetto VIOLoC ha consistito nel mettere a disposizione degli operatori un dispositivo di connettivit\u00e0 di rete, in modo tale che le informazioni raccolte dal dispositivo o in azienda, possano essere elaborate in remoto (clouding).&nbsp;<\/p>\n\n\n\n<div style=\"height:51px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"is-style-font-inter-md-28\">Il sistema di cloud-computing, interamente progettato e realizzato da Kode, include, non solo un server (che da un lato espone le operazioni di analisi e dall\u2019altro interfaccia le applicazioni client, mobile e webapp, con il servizio di analisi e il database), ma anche due elementi di uso quotidiano per l\u2019agricoltore e gli operatori della cantina:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"is-style-font-inter-md-28\">il VIOLoC Scanner (un\u2019applicazione Android che viene utilizzata assieme all\u2019apposito supporto realizzato per la raccolta dei dati delle analisi)<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"is-style-font-inter-md-28\">la VIOLoC Webapp (la UI attraverso la quale \u00e8 possibile esplorare le analisi e visualizzare le informazioni relative ai campioni raccolti).<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"is-style-font-inter-md-28\">Grazie a questo sistema, gli operatori potranno visualizzare in tempo reale, quale che sia luogo e strumento di connessione, i dati acquisiti con le analisi in vigna e nelle cantine, oltre che la visualizzazione grafica dei risultati, ottenuta dall\u2019elaborazione in cloud di questi dati.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"is-style-font-inter-md-28\">Attraverso l&#8217;integrazione di varie tecniche di Data Science e Machine Learning, gli utenti possono avere a disposizione l&#8217;indicazione immediata del valore di concentrazione dei polifenoli espresso in grammi per litro, indicante chiaramente il livello di qualit\u00e0 del prodotto.<\/p>\n\n\n\n<div style=\"height:51px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"is-style-font-inter-md-28\">Marco Calderisi, CEO di Kode, commenta: \u201cSiamo fieri di aver contribuito alla realizzazione di questo progetto, molto importante per il mondo del controllo qualit\u00e0 in ambito enologico. Si tratta di un sistema complesso, ma reso di semplice utilizzo che, non solo permetter\u00e0 alle aziende di ridurre i costi di analisi (evitando, per cominciare, i continui trasferimenti dalle aziende ai laboratori per il prelievo dei campioni), ma consentir\u00e0 anche di mettere a disposizione degli enologi attraverso un semplice smartphone o tablet, tutte le informazioni sulle analisi in tempo reale\u201d.<\/p>\n\n\n\n<div style=\"height:51px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"is-style-font-inter-md-28\">Il Prof. Fabio Mencarelli del Dipartimento di Scienze agrarie, alimentari e agro-ambientali e coordinatore del progetto VIOLoC, aggiunge : \u201cUn approccio che \u00e8 stato considerato veramente innovativo, fin dalla presentazione del progetto al bando FISR 2019; credevamo veramente che fosse finito il tempo di movimentare campioni per le analisi e fosse il tempo di far viaggiare segnali in cloud con possibilit\u00e0 di avere risposte analitiche immediate, risparmiando quindi tempo e soldi, con minor impatto ambientale; una sfida che abbiamo vinto per l\u2019analisi dei polifenoli grazie al
